Tomato & Cucumber Salad

My tomato and cucumber salad is very, very simple! It only takes a few minutes to put together. This is usually my go to salad when I make rice dishes for dinner.
What I love about all Middle Eastern salads is that the dressing is always homemade! Never, ever store bought. This is very important to me because I know what ingredients are in my food, with no added preservatives.
This is actually my favorite dressing. It's perfect for all salads, whether it's an arugala salad or fatoush, this is the base to all of my dressings. Feel free to make it your own. You can add sumac, za'atar, basil or oregano.
You can serve this for lunch or along side m'jaddara, kabseh, or kufta.
Tomato & Cucumber Salad

Ingredients:
Salad:
2 medium Persian cucumbers, diced
2 medium roma tomatoes, diced
1 green bell pepper, diced
Dressing:
1 teaspoon dried mint (or 1 tablespoon fresh mint)
1 clove garlic, minced (or 1/4 tsp garlic powder)
Juice from 1/2 lemon
1 tablespoon olive oil
Salt, to taste
Directions:
1) In a small bowl, combine mint, garlic, lemon juice, olive oil, and salt. Whisk and set aside.
2) In a serving bowl, combine cucumbers, tomatoes, and bell pepper. Mix.
3) When ready to serve, add dressing to the salad and mix well.
